Carb-Loaded: A Culture Dying to Eat

How many of the health problems that we are witnessing today are the result of our modern food culture? With all the advancements in medicine, people should be healthier now than ever before, however it seems like exactly the opposite is the case.  Experts agree that we are seeing an epic increase of chronic diseases such as obesity, diabetes, heart disease, high blood pressure, and cancer.

In the United States obesity has reached a fixed high level, which is now being called hyper-endemic obesity. Needless to say we’re in a crisis.

Take for instance diabetes. This disease has been plaguing mankind for hundreds of years.  The very first time it was mentioned in medical literature was over two thousand years ago. The word ‘mellitus’ (like honey) was added around 1675 when a doctor named Thomas Willis discovered that the urine of his diabetic patients was sweet.

Diabetes is now the seventh leading cause of death in the United States and the eighth leading cause of death worldwide. According to studies, if this keeps up, by the year 2050 one in three Americans will be diabetic and about one in every two will be obese.

Since the year 2000, obesity rates have been growing faster in children and have nearly tripled. Kids who are between the ages of two and five are leading this horrifying trend.  What this means is that about one in three children this age either have an issue with weight or are obese.

If a child who is only eight years old ends up having adult onset diabetes, then by the time he’s 18 he will have heart disease and might die at a younger age than his parents did. Diabetes is a risk for developing heart disease, kidney failure, blindness, nerve damage, and even foot amputations.

The obesity epidemic is fueling the number of cases of diabetes. As it is, one out of every five dollars spent in the United States goes towards the care of people with diabetes.

How did this happen? Well, the answer is not that easy to come by because there are many factors involved. Such as the use of GMOs, pesticides, pollutions, gluten, microwaves, growth hormones, genetics, preservatives, trans fat, portion sizes, allergies, and even food dyes.
